  • Large Bulgarian green pepper (cut into strips) – 1 pc.
  • Big Bulgarian yellow pepper (cut into strips) – 1 pc.
  • Eggs – 2 pcs.
  • Pitted black olives (chopped) – 0.5 cups
  • Ciabatta – 0.5 pc.
  • Fresh cilantro (chopped) – 2 tbsp
  • Small red onion (finely chopped) – 1 pc.
  • Garlic (finely chopped) – 1 clove
  • Fresh oregano (chopped) – 1 tbsp
  • Olive oil – 2 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Lemon wedges for serving

  1. Boil the eggs, peel them, and cut them into small pieces. Fold into a bowl. Add olives, cilantro, salt, and pepper stir, and set aside.

  2. Switch on the oven with grill function for preheating.
  3. In a separate bowl, combine all the bell peppers, onions, garlic, oregano, and oil, season with salt and pepper to taste.

  4. Cut the ciabatta in half horizontally and then cut each piece into 2 pieces. Place the slices down on a wire rack and place in the oven until golden brown. Turn the slices of bread with the slices up, place the bell pepper mixture on them.
  5. Place the sandwiches in the oven under the grill for 4-5 minutes, until the pepper is soft.
  6. Remove the sandwiches from the oven, top with chopped eggs, and serve immediately with lemon wedges.
