Sandwiches with Sardines, Cucumber and Red Onion

Simple quick sandwich recipes always get attention. These sandwiches with sardines and fresh vegetables are no exception! The sandwiches are very colorful and delicious. A great option for a hearty snack!

Ingredients

  • Canned sardines – 1 can (240 g)
  • White (or rye) bread – 120 g (6 slices)
  • Mayonnaise – 50 g
  • Horseradish – 1-2 teaspoon (to taste)
  • Red onion – 1 pc. (60 g)
  • Cucumber – 1 pc. (130 g)
  • Cherry tomatoes – 2-3 pcs. (100 g)
  • Fresh dill (optional) – 2 branches

Directions

  1. Combine mayonnaise with horseradish in a small container. Stir well
  2. Peel the onion and cut it into rings. Cut the cucumber into thin slices.
  3. Cut the bread into slices about 1 cm thick. I made 6 slices. Brush each slice of bread with a mixture of horseradish mayonnaise (about 1 teaspoon for each slice).
  4. Place 2 cucumber and 1 onion circles on each slice of bread.
  5. Empty the sardine jar. Carefully remove the sardines from the jar. Place 2-3 pieces of canned fish on top of each sandwich.
  6. Cut the cherry tomatoes into thin slices and decorate each sandwich. Add a small sprig of dill or parsley if desired.
