Ingredients

  • 750 g potato (s), waxy
  • 1 shallot (s)
  • 2 tomato (s)
  • 1 tablespoon basil, freshly chopped

For the dressing:

  • 1 tomato (s), peeled and finely chopped
  • 4 tablespoon olive oil, extra virgin
  • 4 tablespoon olives, black, finely chopped
  • 1 tablespoon vinegar, (wine vinegar)
  • 1 clove (s) garlic, finely diced
  • salt
  • pepper

Instructions

  1. Boil the potatoes and then cut them into large cubes.
  2. Finely dice the shallots and cut the tomatoes into wedges and add to the potatoes.
  3. Now prepare the same from the ingredients for the dressing and pour over the potatoes. Season with salt and pepper and sprinkle with the basil.
  4. The dish also works with floury potatoes, because they disintegrate, they absorb the dressing better.
