Ingredients

  • 500 g sauerkraut (not canned), drained well
  • 0.5 ½ spring onion (s), green, finely chopped
  • Egg (s)
  • Flour
  • salt and pepper
  • oil
  • 4 sausages
  • possibly applesauce, warm, coarse

Instructions

  1. Drain the sauerkraut well and try to remove as much moisture as possible. Possibly Place sauerkraut between 2 paper towels and squeeze out. Put the sauerkraut in a bowl, mix well with the eggs, flour, green onions, salt and pepper.
  2. Put the oil in a pan, heat it up and add small heaps of the sauerkraut mixture to the hot oil and flatten with a fork. When it turns a little brown, turn it over (about 4 minutes). Put on a plate and keep warm.
  3. Cut the sausage into thin slices and cook and brown under the grill. Arrange sauerkraut pancakes with bratwurst on plates and, if you like, serve with warm, coarse applesauce.
  4. Kielbasa or any other smoked sausage can be used instead of bratwurst.
