Ingredients

  • 1 kg sauerkraut
  • 250 g Kasseler, lean
  • 2 vegetable onion (s)
  • 3 large carrot (s)
  • 4 pickled cucumber (s)
  • 6 pepper (s), red, yellow and green
  • 4 teaspoons vegetable oil
  • 1 ½ liter vegetable stock
  • 150 g sour cream
  • 200 ml apple juice
  • pepper
  • Sweetener, liquid

Instructions

  1. Cut the sauerkraut into small pieces. Cut smoked pork, vegetable onions, carrots and cucumber into cubes, peppers into fine strips.
  2. Fry everything in the heated vegetable oil, stirring constantly. Deglaze with vegetable stock and cook over medium heat for about 20-25 minutes. Stir in sour cream and apple juice and season with pepper and sweetener.
  3. Tip: The soup can be prepared very well the day before.
