Saute of Corn and Bell Pepper

This saute of corn and bell pepper can be served as a side dish for meat or fish, as well as a hot snack.

Ingredients

  • Fresh corn (grains) – 2 cups
  • Bulgarian red pepper (finely chopped) – 0.5 cups
  • Bacon – 1 strip
  • Olive oil – 1 tbsp
  • Fresh parsley (chopped) – 0.25 cups
  • Salt to taste

Directions

  1. In a large skillet over medium-high heat, heat the olive oil, add the chopped strips of bacon and fry, stirring occasionally, until brown, about 2 minutes.
  2. Put corn and bell peppers in a frying pan, sprinkle with 1/4 teaspoon of salt. Cook, stirring occasionally, for about 2 minutes.
  3. Add the parsley, stir and serve as a side dish or appetizer.
