Ingredients

  • 1 head savoy cabbage (about kg)
  • 500 g potato (s)
  • 4 carrot (s)
  • 0.5 liter ½ beef broth
  • 8 sausages (fresh bratwurst)
  • 500 g quark, lean
  • 400 g sour cream
  • 2 cloves garlic)
  • salt and pepper
  • parsley

Instructions

  1. Clean, quarter and cut the savoy cabbage into small pieces. Cut the potatoes into cubes as thick as a thumb and slice the carrots.
  2. Layer everything with the savoy cabbage in a saucepan, pour in the stock, bring to the boil and simmer covered for 30 minutes. Carefully fold through the vegetables and season with salt and pepper.
  3. Cut open the sausages and form small dumplings out of the sausage. Place the dumplings on top of the vegetables and simmer covered for another 12 minutes. Mix the quark and the sour cream, add a little milk if necessary, season with the crushed garlic cloves (or plenty of garlic seasoning), salt and pepper and stir in the parsley.
  4. Arrange the savoy cabbage with the meatballs and garlic quark on a plate.
