Ingredients

  • 16 scampi
  • 2 tablespoon olive oil
  • 4 cloves garlic, sliced into leaves
  • 1 chilli pepper (s), red, cut horizontally into fine strips
  • 2 leeks, cut into thin rings
  • 1 bell pepper (s), yellow, diced
  • 80 g olives, black, pitted
  • 6 cocktail tomatoes, halved
  • 60 g herb butter
  • salt
  • pepper
  • 100 g parmesan, coarsely rated

Instructions

  1. Heat the olive oil in a pan and fry the scampi for about 1 minute on each side.
  2. Line a round baking dish with the scampi as the outer ring. Let the garlic and chilli take on a little color in the pan. Melt the herb butter in it and sauté the leek and paprika over a mild heat for about 5 minutes. Add the olives and tomatoes and briefly heat them carefully. Season the vegetables with spicy salt and pepper and fill the scampi ring. Sprinkle the parmesan evenly over the dish. Put the tin under the grill for 3-4 minutes.
  3. The quantities are intended for the dish as a main course.
  4. In the case of a starter, the quantities are halved.
