Scrambled eggs or scrambled eggs with pickles and cheese are a great country breakfast. Pickled cucumbers give the eggs a special taste and piquancy. The recipe is simple, feel free to try it!

Ingredients
Eggs – 2-3 pcs.
Pickled cucumbers – 5 small or 2 large
Hard cheese – 50-100 g (to taste)
Mayonnaise – 50 g
Ground black pepper – 1 pinch (to taste)
Parsley – 10 g (to taste)
Vegetable oil – 25 ml
Directions
Grate cucumbers on a coarse grater. Grate the cheese on a coarse grater. Combine the cucumbers, without draining the juice, with the cheese, mix.
Combine eggs with mayonnaise and pepper. Mix eggs and mayonnaise thoroughly until smooth. Finely chop the parsley.
Preheat a skillet with vegetable oil. Put the cucumbers and cheese in a layer on a hot frying pan and let them simmer a little over medium heat, 2 minutes. When the cucumber juice has evaporated a little, pour the omelet over the cheese with cucumbers, let it fry a little, about 30 seconds.
Reduce heat, cover, and leave in the cheese and cucumber omelet for another 2 minutes. Cut the finished scrambled eggs with cucumbers and cheese into pieces (I cut them into 4 pieces) and place them on a plate.
Sprinkle the chopped herbs over the omelet. Serve scrambled eggs and sausages. Bon Appetit!
