Ingredients

  • 4 slices salmon, smoked
  • 6 large egg (s)
  • 1 shot mineral water
  • salt and pepper
  • 1 bunch chives, cut into rolls
  • 1 tablespoon butter
  • 4 slices toast
  • Salad, mixed
  • Dressing your choice

Instructions

  1. Lay out 4 small portion molds (e.g. espresso cups) with cling film and on each one a slice of smoked salmon so that they hang a little over the edge.
  2. Whisk eggs with mineral water, salt and pepper. Chives rolls added. Heat the butter in a pan and let the eggs set while stirring. Fill the molds while it is still warm and press in firmly with the back of a teaspoon. Cover with the overhanging salmon as tightly as possible.
  3. Roast the slices of toast, cut out rounds. Put some mixed salad with dressing on each plate, place slices of toast next to it, top it with a salmon dish
