Ingredients

  • 2 red pepper (s)
  • 400 g tomatoes, chunky, from the can
  • 4 egg (s)
  • 0.5 ½ bunch parsley
  • 1 teaspoon cumin
  • 1 teaspoon paprika powder
  • Sea salt and pepper
  • some oil for frying
  • Avocado (s)
  • Feta cheese
  • Hummus

Instructions

  1. Dice the peppers and sauté in a pan in oil for about 5 minutes. Then add the tomatoes and the spices and simmer for 15 minutes at a low temperature.
  2. In the meantime, chop the parsley, crumble the cheese and cut the avocado into slices.
  3. Make 4 hollows in the tomato sauce, place the eggs in the hollows and carefully stir the egg white into the sauce. Leave the egg yolks whole. Cover the eggs and let them set over medium heat for about 10 minutes.
  4. Sprinkle with parsley and feta cheese before serving. Then arrange on 2 plates with the avocado and the hummus.
  5. Tips: You can prepare this Shakshuka according to your taste. I love it a little spicy and I really like to use chilli. Adding olives to the tomatoes gives the dish a completely different note. If you don`t like hummus, you can roast the chickpeas in the oven and sprinkle them over the shakshuka. If you like it, you can eat wraps or flatbread with it.
