Ingredients

  • 500 g risoni (pasta in rice form)
  • 1 teaspoon vegetable stock powder
  • oil
  • 1 medium onion (s)
  • 500 g minced meat
  • 1 glass bell pepper (s), grilled, in garlic oil to taste
  • 1 small zucchini
  • 1 bunch spring onion (s)
  • 1 packet feta cheese
  • salt and pepper
  • Tzatziki

Instructions

  1. First cook the pasta according to the package instructions, but without salt for this with the vegetable stock powder. But be careful: they shouldn`t get too soft because they`ll be added to the pan later.
  2. Drain the peppers. Cut or dice the onions and fry them in a little oil in a larger pan. Then add the minced meat to the onion, if it is not seasoned yet, season with salt and pepper. When seared, cut the minced meat into small pieces.
  3. Cut the bell pepper and zucchini into cubes and the spring onions into small rings. When the minced meat is cooked through, add the peppers, courgettes and finally the spring onions and continue frying briefly over low heat. Then add the drained pasta to the pan and season everything with salt and pepper to taste. At the very end, cut the feta cheese into small cubes, add to the pan and mix everything together well.
  4. If you like, you can of course also add olives or other vegetables.
  5. Tip: We personally also like the shepherd pan with homemade (or bought) tzatziki or cold as a salad.
