Shortbread Biscuits with Nut Filling

Fragile, melting in your mouth shortbread cookies stuffed with ground nuts and cocoa – an easy-to-prepare delicacy that will appeal to both children and adults. Try it!

Ingredients

For the dough:

  • Egg (yolk) – 1 pc.
  • Butter – 75 g
  • Powdered sugar – 75 g
  • Vanilla sugar – 10 g
  • Milk – 4 tbsp
  • Wheat flour – 250 g + 2-4 pinches for working with dough
  • Baking dough – 10 g

For filling:

  • Almonds – 75 g
  • Sugar – 50 g
  • Water – 3 tbsp
  • Egg (protein) – 1 pc.
  • Cocoa powder – 20 g

For filing (optional):

  • Powdered sugar – 1 teaspoon

Directions

  1. Break the egg, separate the white and set aside for the filling. Combine the yolk with vanilla sugar, powdered sugar and softened butter. Beat with a mixer on low speed for 4-5 minutes.
  2. Sift the wheat flour into a bowl of butter mixture. Add milk and baking powder.
  3. Mix well. Knead to a smooth and uniform dough. Form the dough into a ball, wrap with cling film and place in the refrigerator for 30 minutes to cool and harden.
  4. Prepare the filling.
    Grind the almonds until finely crumbled.
  5. In a separate container, beat the egg white until firm foam (if you turn the bowl upside down, the protein mass should remain stationary).
  6. Combine ground nuts, sugar, cocoa powder and water. Stir well until the mixture is smooth.
  7. Add the beaten egg white to the nut mixture.
  8. Mix thoroughly.
  9. Turn on the oven and preheat to 180 ° C.
    Divide the chilled dough in half. Sprinkle a work surface with 1 or 2 pinches of flour and roll one piece of dough thinly into a rectangle. I got a rectangle measuring 26 * 21 cm.
  10. Place half of the filling on the dough and spread in a thin layer, 1-2 cm from the edge on one side.
  11. Roll the filled dough into a tight roll.
  12. Cut the roll into triangles with a base of 2-3 cm.
    Repeat the process with the remaining dough and the other half of the filling.
  13. Line a baking sheet with parchment paper for baking. Line the cookie cutters a short distance from each other on the parchment.
  14. Place the cookies in the oven and bake at 180 ° C for 17-20 minutes, until golden brown. Then remove the cookies from the oven and cool.
  15. Shortbread biscuits with nut filling are ready. Sprinkle the cookies with icing sugar if desired and serve.
