Ingredients

  • 1 large banana (s), ripe
  • 2 egg (s), medium to small
  • some coconut oil, for frying
  • possibly cinnamon powder

Instructions

  1. First mix the two eggs in a small bowl with a whisk until everything is well mixed. Then cut the banana into small pieces and add it. Mix everything until there are hardly any pieces of banana left and everything has evenly mixed into a liquid mixture (add some cinnamon if necessary).
  2. Heat coconut oil in a pan. Add small portions of the pancake batter and fry over low to medium heat. Turn carefully so that they are browned golden on both sides.
  3. Serve warm and enjoy. No additional sweeteners are necessary as the banana will already make the batter sweet enough. If everything goes well, the pancakes taste like delicious, baked banana!
