Ingredients

  • 25 g yeast, fresh or
  • 1 pack dry yeast
  • 125 ml water, lukewarm
  • 0.5 tablespoon ½ sugar
  • 500 g wheat flour (type 550)
  • 250 g rye flour (type 1150)
  • 350 ml water, lukewarm
  • 1 tablespoon honey
  • 1 tablespoon salt
  • some flour for dusting

Instructions

  1. For the pre-dough, mix the yeast with approx. 1/3 of the first portion of water. Mix with sugar, 100 g flour type 550 and the rest of the 125 ml water to a thick paste. Cover and keep warm and let rise for about 45 minutes.
  2. For the bread dough, add the remaining flour, the second portion of water, honey and salt to the pre-dough and knead everything into a smooth dough. Dusted with flour, let rise for approx. 1 hour. Knead the dough again and let it rest for 10 minutes.
  3. Preheat the oven to 250 ° C. Shape the dough into 2 loaves. Let rise on a baking sheet lined with baking paper for about 30 minutes. Bake at 250 ° C for about 10 minutes. Then reduce the heat to 175 ° C and bake for another 15 minutes. Circulating air is not recommended.
