Sponge cake with strawberry jam, which can be prepared for tea drinking with the family. We offer a simple recipe for delicious and tender pastries. Biscuit dough can be prepared in different ways, for example, the simplest one – without separating the egg whites from the yolks and without additives (such as sour cream). But although the sponge cake is simple in terms of the number of ingredients and technology, its recipe still contains some subtleties of making an airy, fluffy dough.
Ingredients
Eggs – 5 pcs.
Sugar – 0.5 cups
Sour cream – 1 tbsp
Flour – 0.75 cups
Vanilla sugar – 1 sachet
Strawberry jam – 0.5-0.75 cup
Directions
Separate the yolks from the proteins.
Combine the yolks with sugar and grind with a spoon to white. You can also use a mixer.
While stirring, add sour cream and vanilla sugar.
Stir in flour in small portions.
Beat the egg whites separately with a mixer.
Add some of the whipped whites to the yolk mass and stir gently from top to bottom. Add the rest of the proteins and stir slowly until smooth.
Grease the mold with butter and sprinkle with flour (or cover with parchment paper). Pour the biscuit dough into a greased and floured dish, filling it no more than halfway. Bake the biscuit at 170-180 ° C until golden brown (40 minutes) without opening the oven door. After the signal, leave the biscuit in the oven for another 10 minutes to cool slightly.
Put the finished biscuit carefully on a sieve and cool completely. Cut the biscuit horizontally into several layers (With a mold dia of 26 cm, the biscuit is cut into two layers, with a mold dia of 21 cm – into three).
Layer the cake layer with thick strawberry jam and top with a second biscuit cake layer.
Sprinkle icing sugar over the top and sides of the cake.
