  • 2 turkey schnitzel
  • 1 onion (s)
  • 300 g mushrooms, fresh
  • 1 lemon (s), untreated
  • 4 sprigs parsley, smooth
  • 4 tablespoon sour cream
  • 400 ml vegetable stock, (instant)
  • Salt and pepper, a.d.M.
  • Extra virgin olive oil!

Instructions

  1. Wash the untreated lemon and peel it very thinly. Cut the peel into very thin strips. Squeeze the lemon. Cut turkey schnitzel into thin strips. Peel onions and cut them into fine pieces. Clean the mushrooms and cut into slices. Wash the parsley, shake dry and finely chop. Prepare vegetable broth.
  2. Heat some olive oil in a pan and fry the meat in it, remove and season with salt and pepper. Steam the onion, mushrooms and lemon zest in the frying fat.
  3. Season with salt and pepper, pour in the vegetable stock and simmer for about 5 minutes.
  4. Warm the meat in the sauce, mix in the sour cream and season the sliced meat with lemon juice, salt and pepper.
  5. Arrange the shredded meat on plates and sprinkle with the parsley.
  6. As a side dish, ribbon noodles (fettuccine or tagliatelle) and a seasonal salad are enough.
  7. Drink recommendation: a light red wine that can also be chilled, such as a Bardolino Classico
