Ingredients

  • 1 apple
  • 1 avocado (s), ripe but firm
  • 1 medium onion (s), red, cut into half rings
  • 2 handfuls basil, roughly chopped
  • 1 tablespoon parsley, finely chopped
  • 2 clove (s) garlic, pressed
  • 2 tablespoon sesame seeds, roasted without fat
  • 2 tablespoon sunflower seeds, roasted without fat
  • 2 tablespoon pine nuts, roasted without fat
  • 1 tablespoon mustard, medium hot
  • 2 tablespoon honey
  • 4 tablespoon balsamic vinegar, lighter
  • 4 tablespoon olive oil
  • Pepper from the grinder
  • salt

Instructions

  1. Peel the cucumber, but leave a few more strips of the peel to stand. Halve, core and cut into slices. Eighth, core and slice the apple with the skin. Cut the avocado into cubes. Mix everything in a bowl. For the dressing, whisk together the mustard, honey, pressed garlic, balsamic vinegar and olive oil with a whisk. Then add the chopped parsley. Season to taste with salt and pepper. Pour the dressing over the cucumber, apple, avocado and onion mixture and mix gently. Then mix in the sesame, sunflower and pine nuts. Finally fold in the basil. It is best to let it steep for about 10 minutes.
