Ingredients

  • 2 bell pepper (s)
  • 250 g suar snap peas
  • 1 onion (s)
  • 1 clove garlic
  • 1 teaspoon sugar
  • 1 teaspoon paprika powder, noble sweet
  • 500 ml vegetable stock
  • 250 ml cream
  • 1 tablespoon crème fraîche
  • 1 bunch chives
  • salt and pepper

Instructions

  1. Cut the bell pepper into strips and cut the snow peas in half. Sauté the onion and garlic, then add the paprika strips, sugar snap peas, sugar and paprika powder and sauté for 5 minutes. Pour in the vegetable stock and simmer in a closed pot for about 20 minutes.
  2. Then add the cream, puree, season with salt and pepper and bring to the boil again briefly. Scatter chives on the soup and serve with fresh baguette.
