  • 1 cup flour
  • 1 cup milk
  • 1 tablespoon butter
  • 1 pinch salt
  • 1 egg white
  • breadcrumbs
  • ham
  • cheese
  • tomato sauce
  • échamel sauce

Instructions

  1. Bring the milk, butter and salt to the boil and then immediately stir in the flour vigorously with a wooden spoon so that no lumps form. Let the smooth dough cool down.
  2. Roll out the dough thinly with a rolling pin and cut out round circles. Now fill with, for example, boiled ham, cheese, tomato sauce, béchamel sauce or vegetables. Fold into crescents, press the edges firmly on. Brush with the egg white and turn in breadcrumbs. Now fry until golden in hot fat and the sofficini are ready.
