Ingredients

  • 1 bunch sorrel
  • 200 g pine nuts
  • 300 g parmesan, freshly rated
  • 4 tablespoon olive oil
  • 1 clove garlic
  • 1 teaspoon salt

Instructions

  1. Chop the sorrel (remove the thick middle), roast the pine nuts without fat and let them cool, chop the garlic, finely grate the parmesan, put everything together in the mixer and puree with the oil to a creamy mass, season to taste.
  2. Tastes great with pasta and gnocchi, goes well with vegetables, vegetables and meat, and can also be used as a filling.
