Soup with Noodles and Lentil-Rice Balls

I would like to offer you a very interesting vegetarian dish to try – noodle soup with lentil-rice balls. We successfully replace traditional meatballs with lentil and rice meatballs – tasty and healthy.

Ingredients

  • Spaghetti (I have long noodles) – 100 g
  • Bulb onions – 3 pcs. (200 g)
  • Carrots – 1 pc. (100 g)
  • Tomato paste – 1 tbsp
  • Garlic – 1 clove
  • Salt – 1/2 teaspoon
  • Vegetable oil – 4 tbsp
  • Bay leaf – 2-3 pcs.
  • Black peppercorns – 3-4 pcs.
  • Fresh dill – 4-5 branches
  • Water – 2 l

  • For meatballs:
  • Lentils – 100 g
  • Rice – 50 g
  • Bulb onions – 1 pc. (70 g)
  • Garlic – 2 cloves
  • Salt – 1/3 teaspoon
  • Flour – 4 tbsp

Directions

  1. Pour rice with water in a saucepan and boil until tender. For convenience, it is better to do this in the evening. Also prepare lentils in the evening. Rinse lentils several times, then pour cold water into a bowl and leave overnight.
  2. Peel one onion and 2 garlic cloves. Pass the swollen lentils, boiled rice, peeled onions and garlic through a meat grinder. Add 2 tablespoons flour and salt. Stir until smooth. Roll out balls about 3 cm in size from the minced meat.
  3. Roll each ball in the remaining flour (2 tablespoons).
    Heat 2 tablespoon in a skillet. tablespoons of vegetable oil and fry the meatballs until light golden brown on all sides. Put the fried meatballs in a plate.
  4. Pour 2 liters of water into a saucepan. Peel one onion, put it in a pot of water and add bay leaves and peppercorns. Boil. Peel the remaining two onions and carrots. Cut the onion into small cubes, grate the carrots on a coarse grater. Heat the remaining vegetable oil in a skillet and fry the onions and carrots until soft, about 7-10 minutes. Then add tomato paste to the vegetables and fry for another 5 minutes.
  5. Remove the onion and bay leaves from the boiling water in a saucepan. Put the frying in a saucepan and salt. Cook for 3 minutes. Then add spaghetti (I have long noodles). For convenience, long pasta can be broken. Cook for 5 minutes. Gently put all the meatballs into the pan using a spoon. Wait until they come up.
  6. Peel 1 clove of garlic and chop finely. Rinse the dill greens and chop finely too. Once the meatballs have surfaced, add the dill and garlic. Turn off the heat after 1 minute. Let the soup brew for 10 minutes. Then pour the ready-made soup into bowls and serve.
