Ingredients

  • 1 bunch soup greens
  • 3 large potato (s)
  • 1 liter vegetable broth
  • 1 glass pickled cucumber (s), (catch the liquid!)
  • 200 ml cream, (or cream fine etc.)
  • 1 bunch dill, for garnish
  • a bit salt
  • some pepper

Instructions

  1. Bring 1 liter of water with 2 tablespoons of instant vegetable broth or homemade vegetable broth to a boil.
  2. Cut the washed soup vegetables and the peeled potatoes into small pieces (into cubes and rings) and place in the saucepan.
  3. Chop the cucumbers on the coarse grater and also add to the vegetable stock.
  4. Let everything boil together for 2-3 minutes and then puree with the hand blender. Add about 3 tablespoons of the cucumber water from the glass as well as the cream and season with salt and pepper as required. Garnish with dill.
  5. If you like, the soup can be garnished with crayfish or something similar.
  6. For us it is already something delicious without a garnish.
