Ingredients

  • 400 g flour
  • 250 ml water
  • Locust bean gum (Biobin), 2 measuring spoons
  • 0.5 teaspoon ½ salt
  • 1 pinch (s) nutmeg
  • possibly corn grits

Instructions

  1. Dissolve the biobin in the water, then mix with the flour, salt and nutmeg to form a dough. The result is a soft, but not runny dough. Then press the dough into plenty of boiling salted water using a spaetzle press or slicer.
  2. Stir and bring to the boil. When the spaetzle come up to the surface of the water, simply skim them off.
  3. Tip: If you increase the amount of water slightly, you can add corn grits. The spaetzle will then be nice and yellow. Just try!
