Spanish Yellow Rice

Ingredients

  • 2 tbsp olive oil
  • 1 cup long-grain rice
  • 1 cube of chicken stock
  • ½ cup chopped red pepper
  • ½ cup peas
  • ½ cup corn
  • ¼ cup chopped onion
  • 1 garlic clove, minced
  • 1 pack of tomato sauce
  • 2 ½ cups water
  • Salt and pepper to taste
  • 3 sliced ​​boneless chicken breasts
  • 1,360 kg of large shrimps

Directions

  1. Peel the large shrimp and remove the intestinal vein. Remove the shell of the shrimp, starting at the head. To remove the intestinal vein, make a 0.6 cm incision in the top of the shrimp and pull out the dark vein running down the back. If you can’t see the intestinal vein, just move on to peeling the next shrimp.
  2. Slice 3 boneless chicken breasts. Use a sharp knife to cut the breasts into long strips that are 2.5 cm wide.
  3. Heat 2 tablespoons of olive oil in a skillet. Heat the oil for at least one minute until it starts to bubble.
  4. Add chicken and shrimp to the hot oil. Cook them for 5 minutes. They will continue to cook as other ingredients are added.
  5. Add 1 cup long-grain rice and stir. Cook the rice for 2-3 minutes, until lightly browned.
  6. Add 1 cube of chicken stock to the mixture.
  7. Add ¼ cup chopped onions, 1/2 cup corn, and 1/2 cup diced red pepper to the mixture. Continue mixing ingredients.
  8. Add one minced garlic clove and ½ cup peas to the rice. Fry the ingredients for 1-2 minutes.
  9. Add 1 packet of tomato sauce and 2 ½ cups of water to the ingredients. Season with salt and pepper to taste. Stir the ingredients to combine.
  10. Cover the skillet. Reduce the temperature to low and cook the Spanish rice without touching it for 15-20 minutes until the liquid is absorbed. You can open the lid once or twice at the end of the process to check if the rice is done, but keep it closed the rest of the time.
  11. Turn off the fire. Let the platter cool for about five minutes. During this time, the remainder of the liquid will be absorbed and the flavors will mix.
  12. Serve. Serve this delicious rice as your main course. With this recipe, you will have 5 servings.
