Ingredients

  • 1 medium onion (s)
  • 1 lemon (s)
  • 3 cups garlic clove (s)
  • 100 g suar, brown
  • 1 cup ketchup
  • 3 tablespoon Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 2 teaspoons paprika powder
  • 1 teaspoon chilli flakes
  • 1 teaspoon, heaped mustard
  • 1 teaspoon smoked salt
  • 1 teaspoon soy sauce
  • 1 kg ribs
  • Clarified butter, or olive oil

Instructions

  1. Bbq sauce:
  2. Finely chop the onion and let it soak in clarified butter or olive oil for 5 minutes. Add the garlic at the last minute. In the meantime, mix the ketchup, Worcester sauce, sugar, mustard and lemon juice. Then deglaze the onion and garlic with the red wine vinegar and add the ketchup mixture. Add the paprika powder, chilli flakes and the smoked salt. Let simmer gently for 10 minutes. Season to taste with the soy sauce, salt, pepper, possibly also with smoked salt.
  3. Spare ribs:
  4. Brush the spare ribs well with the BBQ sauce. In the meantime, preheat the oven to 180 degrees. Place the spare ribs on the lower rail and cook at 180 degrees with the fan-assisted grill function for 60 minutes. Brush the upper side with BBQ sauce every 20 minutes. The spare ribs are done when you can easily poke a toothpick through the meat.
