Ingredients

  • 500 g spelled flour type 1050
  • 7 g dry yeast, one packet
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 180 ml milk, lukewarm
  • 140 ml water

Instructions

  1. The yeast is stirred into the flour. Then a hollow is made in the flour. Mix in the other ingredients and knead so that a smooth dough is formed. I don`t use an electric mixer, I do it entirely with my hands. When everything is well kneaded, the dough must rest and rise for 20 minutes. I always put the dough in the almost 50 degrees warm oven and cover it with a damp cotton cloth.
  2. Do not work the dough heavily after it has risen. It is only cut into three roughly equal parts and made into a baguette shape.
  3. Preheat the oven to 200 degrees and then bake the loaves for 12 minutes. Depending on the oven, the baking time varies between 10 - 20 minutes. The knock test can be used to check whether the baguette is ready: if the loaf sounds hollow, it is baked.
