Ingredients

  • 0.5 ½ cube yeast
  • 0.5 teaspoon ½ salt
  • 0.5 teaspoon ½ bread spice mix, (to taste)
  • 600 g spelled
  • 300 ml water
  • 125 ml buttermilk
  • 2 tablespoon olive oil

Instructions

  1. Preheat the oven to 220 degrees and place an ovenproof bowl of water in the oven.
  2. Finely grind the spelled. Mix in the salt and bread spices. Dissolve the yeast in lukewarm water. Mix the water, buttermilk and olive oil with the grain and knead well by hand or with a food processor for about 10 minutes. Cover the dough and let it rise in a warm place until the dough has doubled in volume.
  3. Then knead the dough again briefly and shape it into a bread, place on a greased baking sheet and cover again and let it rise again. Then put the bread in the preheated oven and bake for 10 minutes at 220 degrees. Bake for another 30 - 40 minutes at 170 degrees.
