Ingredients

  • 250 ml soy drink, light
  • 125 g honey, (orane blossom honey)
  • 125 g raw cane suar
  • Vanilla, from the pod
  • 0.5 teaspoon ½ sea salt
  • 1 teaspoon lemon peel, grated or orange peel
  • 1 teaspoon cinnamon
  • 250 g spelled flour, 630
  • 1 teaspoon baking soda
  • 3 tablespoon apple cider vinegar

Instructions

  1. Pre heat the oven to 180 degrees celcius.
  2. Gently heat the soy drink, add the honey, sugar and spices and let it melt. Once the honey and sugar have dissolved, let the soy drink cool down. Mix the baking soda with the spelled flour and stir in. The dough should be smooth.
  3. Line a loaf pan (25 cm) with baking paper.
  4. Just before filling, stir the vinegar into the dough and pour it into the prepared form.
  5. Bake the honey cake for about 50 minutes. A chopstick sample can be taken after 40 minutes. Cover the cake if it gets too dark.
  6. Let cool down completely on a cake rack.
