Ingredients

  • 250 g spelled flour type 630
  • 125 ml water, lukewarm
  • 0.5 ½ cube yeast, fresh
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 200 g mozzarella, rated
  • 200 g Gouda cheese, rated
  • 1 glass tomato sauce
  • rocket
  • Herbs, your choice
  • possibly fat, for the shape

Instructions

  1. Mix the yeast with the water and mash a little. Let it soak for 5 - 10 minutes and stir well again. Put the flour and sugar in a bowl and make a well in the middle. Pour the yeast porridge into the well and knead with a paddle. Add the oil and knead vigorously with your hand in rolling, pressing movements in the bowl. Finally, toss vigorously into the bowl several times.
  2. Flour the bowl, put in the dough and sprinkle with a little flour. Put the dough in the oven for 20 - 30 minutes at approx. 50 degrees (possibly covered with a damp cloth). Now add the salt and knead again thoroughly.
  3. Halve the dough. Roll out on a floured work surface using a rolling pin. Grease molds if necessary. Pour the dough into the molds and press gently to the edge. Brush with tomato sauce and sprinkle with the cheese mixture. If you like, you can top the pizza to your heart`s content. Bake at about 250 degrees for about 12 minutes. Only add rocket or herbs after baking.
