Ingredients

  • 250 g flour, (whole spelled flour)
  • 250 g wheat flour or liht spelled flour
  • 10 g suar, or honey
  • 10 g salt
  • 20 g yeast, fresh
  • 200 g cream
  • 150 g water
  • 50 g butter, melted

Instructions

  1. Dissolve the yeast with the salt and the sugar / honey and the water.
  2. Make a smooth yeast dough from the ingredients and knead for about 5 minutes.
  3. Walking time approx. 30 minutes.
  4. Then grind 50 g rolls or fold 100 g baguette rolls.
  5. Walking time on the baking sheet lined with baking paper approx. 30 minutes.
  6. Preheat the oven to 230 degrees with a water bowl.
  7. Bread rolls in the oven, 10 minutes at 230 degrees, then 20 minutes at 180 degrees, steaming every 5 minutes with the water syringe.
  8. By grinding or folding the rolls open wonderfully when baking.
  9. Please do not extend the walking times excessively, as this will result in over-baked goods that will cause the rolls to collapse when baking.
  10. This recipe has been tried and tested - my men prefer to eat these rolls straight with butter.
