Ingredients

  • 120 g semolina (spelled semolina), liht, (no wholemeal semolina)
  • 2 egg (s)
  • 1 tablespoon butter, liquid
  • a bit salt
  • some pepper
  • some nutmeg
  • some chives, fresh

Instructions

  1. Weigh 120g light spelled semolina and place in a bowl.
  2. Add 2 eggs, 1 tablespoon liquid butter, salt, pepper and nutmeg to taste. Mix with a whisk until frothy.
  3. Now let it rest for an hour, do not stir the mixture any more, otherwise the dumplings would not rise and remain solid in the soup.
  4. Now carefully cut off dumplings with 2 teaspoons and add to boiling beef broth or chicken broth. Squeeze the dough as little as possible.
  5. Now boil briefly and then let it steep for 20-30 minutes, depending on the desired firmness.
  6. The dumplings increase in size.
  7. Before serving, add fresh, finely chopped chives to the soup.
