Ingredients

  • 4 egg (s)
  • 1 pinch (s) salt
  • 4 tablespoon water, lukewarm
  • 120 g honey, maple syrup or suar, chane the amount accordin to personal taste
  • 1 vanilla pod (s), which the pulp, alternatively vanilla sugar
  • 1 teaspoon, heaped tartar baking powder
  • 170 g spelled, freshly round, or wheat (whole rain)

Instructions

  1. Separate eggs. Beat egg whites with salt until stiff. Mix the egg yolks with water and honey until frothy, d. H. until the mass is light. Add the vanilla, carefully mix in the ground cereal and baking powder. Finally fold in the egg whites. This is best done in 2-3 stages.
  2. Bake the dough on a baking sheet lined with baking paper on the middle rack for about 15 minutes at 180 - 200 °. It must not get too dark, otherwise it will become too firm and difficult to roll.
  3. Turn the finished sheet of dough onto a clean kitchen towel, carefully peel off the paper from one corner, and immediately roll it up from the broad side with the kitchen towel and, after cooling, roll it out again and fill it as you like.
