Ingredients

  • 1 kg spelled flour
  • 330 ml milk, organic (alternatively vanilla-soy milk is also possible)
  • 40 g yeast
  • 1 teaspoon salt
  • 125 g raw cane suar
  • 3 egg yolks
  • 200 g quark, oranic
  • 125 g butter, oranic (sour cream)
  • 200 g cream, oranic
  • some almond (s), sweet, sliced or slivered
  • some milk or egg yolk for brushing

Instructions

  1. Make a yeast dough from the ingredients mentioned, I gradually add all the ingredients to the flour, in which I have formed a well, and knead a nice, smooth dough by hand. Although this is a bit more complex, it is worthwhile. Of course, you can also use the dough hook or the yeast dough program of the bread maker.
  2. Let the finished dough rise well in a warm place until it has doubled in fullness.
  3. Now cut the dough into 3 - 6 halves (depending on whether you want a large braid or two smaller ones).
  4. Roll out the pieces with your hands into evenly thick, long, round bars, for a braid you need three of them, which you put on top of each other and braid a braid. Place this (s) on a baking sheet lined with baking paper and let rise again (approx. 10 - 15 min) Caution: if you make two, do not put the braids too close to each other, as they will rise again and bake together!
  5. Before baking, brush the braid with a little milk or egg yolk and sprinkle with sliced or split almonds as desired. Bake for a good half an hour until golden brown on the middle rack at good medium heat (around 150 ° C).
  6. You can of course also use conventional products for this delicious braid, but why not prepare an organic spelled yeast braid.
