Ingredients

  • 400 ml coconut milk
  • 2 tablespoon curry paste, red
  • 2 cloves garlic, crushed
  • 500 g beef, lean
  • 2 kaffir lime leaves, cut into strips
  • 3 tablespoon lime juice
  • 2 tablespoon fish sauce
  • 1 large chilli pepper (hot), pitted and cut into strips
  • 0.5 teaspoon ½ turmeric, ground
  • 0.5 teaspoon ½ salt
  • 2 tablespoon basil leaves, chopped (green or Thai basil)
  • 2 tablespoon coriander greens, chopped
  • pepper
  • Grated coconut, freshly grated, for garnishing

Instructions

  1. Bring the coconut milk to a boil in a large saucepan. Reduce the heat and simmer the milk for 10 minutes until it thickens. Stir in red curry paste and garlic and simmer for 5 minutes.
  2. Cut the meat into 2cm cubes, add to the saucepan and bring to the boil while stirring. Reduce the heat. Add the lime leaves, lime juice, fish sauce, cili, turmeric and salt.
  3. Cover the mixture and simmer for 20-25 minutes, until the meat is cooked through. Pour in a little more water if necessary.
  4. Add the basil and coriander and season with pepper. Sprinkle with coconut shavings and serve with rice.
