Ingredients

  • 2 corn on the cob, fresh
  • 1 clove garlic
  • 1 hot pepper
  • 1 spring onion (s), possibly a little more depending on the size
  • Parmesan or Pecorino
  • sea salt
  • 1 lime (s)
  • 1 tablespoon butter
  • some oil for frying

Instructions

  1. Separate the corn kernels from the cob with a knife. Finely chop the garlic and hot peppers. Cut the spring onion into fine rings. Grate the cheese.
  2. Heat the oil in a pan and fry the corn kernels. Reduce the temperature and fry the garlic and peppers briefly over medium heat, otherwise the garlic will be bitter. Season to taste with the sea salt and the juice of the lime. At the end add the butter and let it melt.
  3. Arrange the mixture in a shallow bowl or on a large plate. Pour the spring onions and cheese over it and enjoy the salad lukewarm.
  4. The salad tastes good with grilled meat or with baguette and herb butter.
