Ingredients

  • 1 pomelo (s), peeled
  • 2 tablespoon olive oil
  • 4 shallot (s), peeled and sliced
  • 6 clove (s) garlic, peeled, finely diced
  • 1 large chilli pepper (s), red, pitted, diced into small pieces
  • 1 bunch spring onions, cleaned and sliced
  • 1 tablespoon fish sauce
  • 1 lime (s), juice it
  • 1 tablespoon sugar
  • 30 g peanuts, roasted, salted
  • 0.5 ½ bunch coriander greens, roughly chopped

Instructions

  1. Peel the pomelo, divide into segments and peel them very carefully. Then cut into pieces like oranges.
  2. When you have finished the pomelo, heat the oil in a pan, add the shallots, garlic cloves and chillies and let them brown. Caution: Do not brown too much so that the garlic does not become bitter. Then add to the pomelo. Add the spring onions as well.
  3. Now mix the fish sauce with the lime juice and the sugar until the sugar has dissolved. Add to the pomelo, peanuts and coriander, mix everything together and let sit in the fridge for 15 minutes.
  4. Basically, this salad goes well with many Thai and other Asian dishes.
  5. A salad with a fresh experience! I like to make it into spring rolls, e.g., the Thai spring rolls from Paradise_eva from the database.
