- 8 egg (s)
- 100 ml milk
- some salt and pepper
- 1 pinch (s) nutmeg
- 1 pinch (s) cayenne pepper
- some butter for frying
- 0.5 ½ pack creamed spinach, frozen
- 1 onion (s), to taste
- 200 g feta cheese or similar cheese

- Put the eggs with the milk in a bowl and stir. Season to taste with salt, pepper, nutmeg and cayenne pepper.
- Heat the spinach in a saucepan, season with salt and pepper. If you like, you can steam the onions until they are translucent before adding the spinach.
- Cut the feta cheese into pieces.
- Heat the butter in a pan and pour in 1/4 of the egg mixture. Let it stop at the bottom. When the surface is still a little damp, distribute the spinach and feta cheese in portions on one half of the omelette and fold it shut and place it in a baking dish. Do the same with the remaining omelets.
- Let the filled omelets get really hot and crispy in the preheated oven at 200 ° C for about 5 minutes, then serve.
