Ingredients

  • 500 g spinach
  • 1 onion (s)
  • 100 g butter
  • 150 g mascarpone
  • 80 g parmesan
  • 2 egg (s)
  • 1 egg (s), including the yolk
  • 2 teaspoons salt
  • pepper
  • 200 g flour (wheat flour)

Instructions

  1. Sort and wash the spinach, place dripping wet in a saucepan and let collapse over medium heat, then drain and roughly chop.
  2. Dice the onion, heat 30g butter in the pan, let the onion become translucent in it and mix in the spinach, remove from heat and cool until lukewarm.
  3. Stir the mascarpone until smooth, stir in half of the parmesan, eggs and egg yolk, salt, nutmeg, pepper and spinach. Finally add the flour and stir. Finally, season the mixture heartily with pepper and salt.
  4. Bring plenty of salted water to the boil. Reduce the heat, then use two wet teaspoons to poke small dumplings out of the dough and form gnocchi out of them. Pour into the boiling (!) Salted water and let it steep for about 5 minutes until they come to the surface. Take out and put in an ovenproof dish.
  5. Now melt the remaining butter and drizzle over the gnocchi, sprinkle with parmesan and bake in the oven (150 °) for 5 minutes.
