Ingredients

For the dough:

  • 300 g wholemeal spelled flour
  • 50 g water, lukewarm
  • 120 g butter
  • 1 egg (s)
  • 1 teaspoon, heaped salt

For covering:

  • 500 g spinach, fresh or frozen
  • 2 onions)
  • 3 tablespoon butter
  • 2 clove (s) garlic (s)
  • 3 egg (s)
  • 125 ml milk
  • 150 g Gouda cheese, rated
  • Broth, granular
  • salt and pepper
  • nutmeg

Instructions

  1. For the dough, mix the egg and salt in the water. Knead into a shortcrust pastry with butter and flour. Place in foil in the refrigerator for 60 minutes.
  2. Dice the onions and garlic and sauté them in the butter over a low heat for 5 minutes. Add the spinach and cook for another 5 minutes. Season with granulated broth, salt, nutmeg and pepper. In the meantime, preheat the oven to 200 degrees circulating air.
  3. Lay out the dough in a springform pan. Bake the dough for about 10 minutes. As soon as the dough has dried a little, take it out of the oven and pour in the spinach. Sprinkle cheese on top. Whisk eggs with milk, salt and pepper and pour over. As soon as the quiche is firm and brown - after about 25 - 30 minutes - take it out and enjoy.
