Ingredients

  • 400 g spinach leaves, fresher
  • 3 orange (s)
  • 3 fig (s), fresh
  • 400 g cheese (halloumi, Greek rilled cheese)
  • 1 handful fresh basil
  • 100 ml olive oil
  • 2 tablespoon balsamic vinegar (crema di balsamic vinegar)
  • 1 tablespoon vinegar (raspberry vinegar)
  • 1 teaspoon mustard (Dijon mustard)
  • possibly orange juice, fresher, if necessary
  • salt and pepper

Instructions

  1. Wash the spinach leaves and remove the stalks. Wash the basil leaves and cut into strips. Then mix the basil and spinach. Halve the figs and then cut into thin slices. Peel the oranges with the knife and remove the orange fillets. Place the figs and oranges on top of the salad or mix with them.
  2. Cut the halloumi into cubes and fry in hot oil until golden brown. It is best to pour it over the salad while it is still warm.
  3. For the dressing, stir together the olive oil, crema di balsamic vinegar, raspberry vinegar and Dijon mustard. Possibly add some fresh orange juice and season with salt and pepper. Pour the dressing over the salad and serve.
