Ingredients

  • Minced meat (I have pork) – 300 g
  • Potatoes – 300 g (4 small)
  • Zucchini – 150 g (1 small)
  • Eggplant – 150 g (1 small)
  • Bulgarian red pepper – 150 g (1 pc.)
  • Carrots – 100 g (1 pc.)
  • Bulb onions – 100 g (1 pc.)
  • Garlic – 2-3 cloves
  • Tomato paste – 2-3 tbsp
  • Seasoning for vegetables – 0.5 teaspoon (to taste)
  • Salt to taste
  • Ground black pepper – to taste
  • Water – 100 ml
  • Vegetable oil – 3 tbsp
  • Fresh herbs (dill and parsley) – 1 bunch

Directions

  1. Minced meat can be used by anyone, I have pork. I took dill and parsley, you can use herbs to taste. Peel and wash the potatoes, onions, and carrots. Wash eggplant, bell pepper, and zucchini. If necessary, peel the eggplant and zucchini and remove large seeds from the zucchini. Peel the seeds and stalks from the pepper.
  2. Cut the onion into quarters and the carrots into quarters.
  3. Heat a skillet with a little oil. The amount of oil will depend on the minced meat used. If fatty, then take less oil, lean – a little more. Put the minced meat in the pan and, stirring occasionally, fry it until the color changes.
  4. Add the onion and carrots to the minced meat and continue cooking for 5 minutes, stirring the contents of the pan from time to time.
  5. Cut the potatoes, eggplant, and zucchini into large cubes, bell peppers into thin strips.
  6. Add potatoes to a frying pan for minced meat with onions and carrots, stir and cook for 5-7 minutes.
  7. Then lay out the sliced ​​zucchini and eggplant. Stir, pour in 100 ml of water, and simmer the vegetables under the lid almost until tender (about 10-15 minutes).
  8. Add bell pepper, stir and cook for 4-5 minutes more.
  9. Wash and dry the dill and parsley. Peel the garlic. Finely chop the herbs and garlic.
  10. Add the herbs and garlic, salt, ground pepper, vegetable seasoning, and tomato paste to the skillet. Stir and cook for about 5 minutes more.
  11. Stew with minced meat, eggplant, potatoes, and zucchini is ready!
