Pork – 1 kg
Canned beans in their own juice – 250 g (1 can)
Tomatoes – 350 g
Onions – 300 g
Carrots – 100 g
Garlic – 4 cloves
Tomato paste – 1 tbsp
Fresh cilantro – 10 g
Chili pepper (optional) – 0.5 pod (about 3-4 cm long)
Cut the pork into large pieces. Chop the carrots coarsely. Cut the onion (150 g) into large wedges. Place the meat, onions (150 g), and carrots in a saucepan. Add 1/2 teaspoon salt, nutmeg, and black peppercorns. Fill the pot with water so that the water level is 10 cm higher than the meat. Bring to a boil, reduce heat to low, and cook pork for 2 hours. Skim off the foam as needed. The meat should be very soft.
Remove the meat from the broth, cut into small pieces, and cover to keep warm. Strain the broth.
If you plan, like me, to serve this meat dish with a side dish of rice, then now is the time to start cooking it. Rinse the rice and cover with water. Cook the rice for 15-20 minutes after boiling until tender. The cooking time depends on the type of rice. At the end of cooking, the rice can be seasoned with salt to taste. Place the rice in a colander, rinse (if necessary), and let the water drain.
Cut the remaining onion into small cubes. Cut the chili into rings. Peel the garlic and grate on a fine grater. Cut the tomatoes into small pieces. Chop the cilantro finely. Preheat a skillet with vegetable oil. Place tomatoes, onions, peppers, garlic, and cilantro in hot oil. Saute vegetables over medium heat for 10 minutes.
Add tomato paste to fried vegetables and stir.
Pour 500 ml of broth into a frying pan with vegetables. Simmer vegetables over medium heat for 10 minutes.
Place the meat in the pan with vegetables. Add beans.
Stir. Season with salt to taste. Simmer meat with vegetables and beans, covered for 7 minutes.
The stew with vegetables and beans is ready to serve. If the rice has cooled down by this time, reheat it and serve along with the meat.
