Strawberry and Lime Salad

• 750 g strawberries
• 1 teaspoon lime zest, grated
• 1 tablespoon lime juice
• 1 tablespoon sugar, brown
• 60 g pine nuts
• 1 bunch lemon balm

Instructions

1. Wash and clean the strawberries and cut into quarters. Mix the grated lime zest, lime juice, sugar and rum until the sugar has dissolved. Mix the marinade with the strawberries and let it steep for 15 minutes.
2. Roast the pine nuts in a pan without fat. Pluck the lemon balm leaves from the stems and roughly chop them. Fold the pine nuts and lemon balm into the salad before serving.
