It’s time to create a menu for the New Year’s table. I decided that this year, instead of herring under a fur coat, I will cook this striped salad with herring and beets for the New Year. It tastes very much like the classic version of the Herring under a Fur Coat salad, but it looks different.

Ingredients
Herring fillet – 250 g (1 herring)
Beets – 300 g
Potatoes – 3 pcs.
Pickled cucumbers – 150 g
Green onions – 1 bunch
Mayonnaise – 60 g
Vegetable oil – 1 tbsp
Lemon juice – 1 teaspoon
Directions
We prepare the necessary ingredients. Boil potatoes and beets, cool and peel. We mill the herring.
Cut the potatoes into cubes.
Cut the pickled cucumbers into small cubes and squeeze out excess liquid.
Cut the herring fillet into small cubes.
Chop green onions. We send some to the salad, and leave some for decoration.
Combine potatoes, cucumbers, herring and green onions. Season the salad with mayonnaise and mix well.
Rub the beets on a coarse grater.
Add lemon juice and vegetable oil to the beets, mix.
We spread the salad with herring on a dish. We give the salad a rectangular shape, slightly condense it on top.
With the help of two wooden spatulas, we move apart the parts of the salad and fill the vacant space with beets.
Decorate the herring and beet salad with the remaining green onions.
