Ingredients

  • 1 large fish (char)
  • 500 g mushrooms, brown
  • 3 shallot (s)
  • 1 sprig rosemary
  • 1 small Bunch parsley, smooth
  • 1 glass white wine
  • 1 hot pepper, fresh, red
  • 1 clove garlic
  • 3 tablespoon oil (olive oil)
  • 30 g butter
  • pepper
  • nutmeg
  • salt

Instructions

  1. Finely chop the shallots and sauté them in olive oil in the pan. Fry the finely chopped mushrooms, finally add the finely chopped clove of garlic and the finely chopped piece of pepper (not too much!), Remove from heat. Season to taste with salt, pepper and nutmeg.
  2. Clean the char and pat dry. Salt and pepper. Spread the aluminum foil with butter and put the filling in the middle. Place the char upright on it, pour a glass of wine, close the foil loosely and steam in the stove at 250 °. It`s done when you can pull off the dorsal fin. The exact time depends on the size.
