Ingredients

  • 1 thick cucumber (about 700 g)
  • 400 g minced beef
  • 500 g mushrooms
  • 1 onion (s)
  • 100 g bacon
  • salt and pepper

  • 500 ml tomato puree
  • 0.5 ½ cup cream cheese with herbs
  • 100 g cheese (e.. Emmentaler), rated
  • 2 cloves garlic

Instructions

  1. Peel the large cucumber, cut off the ends. Then cut in half, cut again lengthways, remove the core and place next to each other in a baking dish. Then drizzle with a little soy sauce.
  2. Clean the large onion, cut it into small pieces and fry it with the bacon. Then add the minced meat and fry with it. Clean the mushrooms and add the minced meat mixture to the saucepan and fry for 5 minutes. Season everything with salt, pepper, the soy sauce and the stock cube.
  3. For the sauce, cut the small onion very finely, clean the garlic cloves and cut into small pieces and fry them with the onion. Then add the tomato puree and bring everything to the boil. Season to taste with the salt and pepper. Then add the cream cheese, stir well so that it dissolves evenly.
  4. The minced meat mixture is then spread over the cucumber quarters, then the sauce is poured over it and finally the grated cheese is spread over it. Everything comes together at 180 ° C for 1/2 to 3/4 hour in the oven. After 3/4 hour the cucumber is done, if you prefer something “bite”, you should only leave everything in the oven for half an hour.
  5. It goes well with baguette or just a few slices of bread. The recipe itself is low-carb and suitable for food combining.
