Ingredients

  • 4 large onion (s)
  • 100 g cheese, diced (youn oat cheese)
  • 1 egg (s)
  • 8 black olives, finely diced
  • 0.5 teaspoon ½ thyme, fresh (or 0.25 dried)
  • 2 tablespoon parsley, chopped
  • salt
  • pepper
  • 2 tablespoons oil

Instructions

  1. Peel the brown skin of the onions and cook the onions in salted water for about 15 minutes. Rinse off with cold water. Carefully hollow out the inside of the onions (should come out by itself) so that a firm shell remains.
  2. Place the onion skins in an oiled baking dish. Finely dice the inside and mix with the goat cheese, olives and herbs. Season well. Fill the onion skins with this mixture. Bake at 200 ° C for about 30 minutes.
  3. Taste both warm and cold (I can`t decide which is better). Either as a side dish to simply roasted meat without too strong taste contrasts, or as a meal with lots of fresh bread.
