Sweet Khachapuri with Cottage Cheese, Bananas and Peach

Today is the recipe with which I amaze everyone I know! Favorite homemade cottage cheese baked goods.

Ingredients

For the dough:

  • Flour – 420 g (+ 2 tablespoons)
  • Milk – 200 ml
  • Butter – 60 g
  • Eggs – 2 pcs.
  • Pressed yeast – 10 g
  • Sugar – 3 tbsp
  • Salt – 1-2 teaspoon

For filling:

  • Cottage cheese – 500 g
  • Bananas – 4 pcs.
  • Eggs – 2 pcs.
  • Sugar – 4 tbsp
  • Canned peach – 1 pc.

To grease the dough:

  • Yolk – 1 pc.
  • Milk – about 1-2 tbsp

Directions

  1. Let’s start with the test.
    The milk should be warm. I melted the butter a little in the microwave.
    The chicken eggs were large, so I took another 2 tablespoon for the test. tablespoons of flour.
  2. We check the yeast for performance (quick brew). Add a spoonful of flour, yeast (crumbled) and half the sugar to warm milk.
  3. Mix everything well and leave it on the table for 10 minutes. Let the yeast disperse and activate.
  4. Pour the flour into a deep cup, add the remaining sugar and salt. Mix everything well.
  5. Then add yeast, eggs and knead the dough.
  6. Last of all (when the dough gathers into a lump), add soft butter. Then we knead for a few minutes (the dough should stick to your hands).
    Cover the finished dough with foil and put it in a warm place for 1-1.5 hours.
  7. To prepare the filling is very easy.
  8. Add eggs and sugar to the curd, mix well (grind).
    We clean bananas.
  9. We knead the dough, lightly dusting our hands with flour. Then we divide the dough in half.
  10. We roll each workpiece into a large round cake (30 centimeters in diameter).
  11. Put the banana on the edge of the cake (I divide the bananas into pieces for convenience) and wrap it up to the middle of the cake.
  12. On the other hand, lay out the second banana and wrap it up to the middle again.
  13. We form “boats” from the dough with bananas, connecting the edges (the classic form of khachapuri).
  14. We spread the boats on a baking sheet covered with parchment.
    Divide the filling into two parts and fill the “boats”.
    Preheat the oven to 180 degrees.
  15. Before baking, let the dough stand a little for about 20 minutes. Beat the yolk with a little milk. Lubricate the edges with a mixture.
  16. We bake in a preheated oven at 180 degrees for 30 minutes.
  17. Put the halves of canned peaches on ready-made khachapuri. It turns out very natural, like the yolk from an egg.
    Let the khachapuri cool down a little.
  18. Bananas in the dough are like a cream. The cottage cheese is delicious and the dough is incomparable. I recommend trying the recipe for sweet khachapuri, and use this dough for homemade baking.
