Sweet Potato and Apple Casserole

Casserole with apples and sweet potatoes is prepared in a creamy sauce with a nut head.

Ingredients

  • Sweet potato – 3 pcs. (1.4 kg)
  • Apples (cut into thin slices) – 600 g
  • Unsalted butter – 4 tbsp + 2 tbsp
  • Pecans or walnuts (fried and chopped) – 120 g (1 glass)
  • Fresh bread crumbs – 1 1/3 cups
  • Fresh parsley (chopped) – 2 tbsp
  • Fat culinary cream – 1 glass
  • Fresh ginger (cut into strips 0.5 cm thick) – 8 strips
  • Anise stars – 2 pcs.
  • Cinnamon – 1 stick
  • Bourbon – 2 tbsp + 2 teaspoon
  • Vanilla extract – 1 1/2 teaspoon
  • Salt to taste

Directions

  1. Set the rack in the oven to the middle position, and turn on the oven itself for preheating to 200 degrees. Cover a large baking sheet with foil. Pierce the sweet potatoes with a fork over the entire surface and put on a baking sheet, bake until soft, about 55-60 minutes. Remove the sweet potatoes from the oven and let cool, and reduce the temperature to 180 degrees.
  2. Peel and knead the cooled potatoes with a potato grinder to a puree-like state, but not too mushy.
  3. In a small bowl, melt 2 tablespoons of butter, add nuts, bread crumbs, parsley, and a couple of pinches of salt.
  4. In a small saucepan, combine ginger, cream, anise stars, and a cinnamon stick. Bring to a boil and immediately remove from heat. Let the cream brew for 15-20 minutes, and then strain through a sieve, remove the spices. Pour the spiced cream into a measuring glass, add 2 tablespoons of bourbon, vanilla extract, and 1/4 teaspoon of salt.
  5. In a large skillet over medium-high heat, heat 2 tablespoons of oil, place the apple slices in the pan, sprinkle with 1/4 teaspoon of salt, and mix well. Raise heat to high and cook apples, stirring occasionally, until soft and slightly brown, 8-9 minutes.
  6. Put out the fire under a frying pan and add 2 teaspoons of bourbon to it, stir. Add 1/3 cup of cream and stir. Remove the pan from the stove and let the apples sit for about 15 minutes, turning them periodically.
  7. Grease an ovenproof dish with a volume of about 3 liters with the remaining butter. Add cream from a measuring glass to the sweet potato, season with salt, pepper, mix. Put apple slices on the bottom of the oiled dish, and spread the sweet potato mixture on them. Sprinkle with bread mass on top.
  8. Place the dish in the preheated oven and bake the apple and sweet potato casserole for about 25 minutes, until the top is a rich brown.
